Não é usual dizer i'm understanding, o correto é i do not understand.

A parte entre parenteses está incorreto, pois aquela frase é afirmativa, e nesta frase está como pergunta. O correto seria what you are saying.
D) I am sorry. Could you tell a bit louder?( I didn't understand) (what you are saying). What was that? What did you tell me?
A primeira parte que coloquei o parentese está no passado, logo o que vier depois deveria está no passado, what you are saying está no presente continuo e deveria estar no past continuo, forma correta what you were saying.
