Carbohydrates Carbohydrates are the most abundant biomolecules in nature and have the general formula [C (H2O)] n, hence the name "carbohydrate" or "carbohydrates". They represent the main food sources for energy production, in addition to exercising numerous structural and metabolic functions in living organisms. The basic chemical definition of a carbohydrate is that they are ketones or aldehydes with hydroxyl groups attached to their structures (polyhydroxy ketones or polyhydroxyaldehydes, respectively) or more complex substances that when hydrolyzed release the former.
